Skipjack (Katsuwonus pelamis) is a small, fast tropical tuna that supplies most of the world’s “light” canned tuna. Fresh skipjack has darkish red flesh, strong flavour, and a firm texture suited to searing, stewing, and traditional dried products such as katsuobushi when processed as bonito-style flakes in related fisheries. Fresh loins need assertive seasoning—citrus, chilli, soy, tomato. Cook through more often than bluefin; skipjack is less about rare steak luxury and more about savoury protein. Excellent value when bright and not ammonia-tainted. Distinguish from true bonito species on the label when possible.
