Pacific bluefin (Thunnus orientalis) is the Pacific sister of Atlantic bluefin—large, migratory, and prized for high-quality sashimi fat when fish are in peak condition. Fisheries and ranching off Japan, Mexico, and the eastern Pacific supply a tightly controlled market; flesh is dense and richly flavoured with deep colour. Cook and serve like other bluefin: minimal heat for top grades, careful searing for steaks. Distinguish from yellowfin “ahi” on the menu—Pacific bluefin is a different fish and price tier. Cold chain from boat to counter decides whether the fat tastes clean or dull.
