Longtail tuna (Thunnus tonggol) is a smaller coastal tuna of the Indo-Pacific, popular in South and Southeast Asian markets for curries, steaks, and canning. Flesh is firm and flavourful, usually leaner and stronger than yellowfin, with a dark bloodline that many cooks remove. Cut into steaks for grilling with spice pastes, cube for sour soups and coconut curries, or can. Cook through more readily than luxury bluefin—longtail shines with bold seasoning rather than rare-centre minimalism. Freshness is critical; warm-water scombroids spoil quickly if mishandled.
