Blackfin tuna (Thunnus atlanticus) is a small western Atlantic tuna taken by recreational and small commercial fishers from the Gulf of Mexico to the mid-Atlantic. Flesh is dark red, moderate in fat, and fine for searing and grilling when bled and iced immediately. It rarely reaches the same luxury channels as yellowfin or bluefin. Treat like a compact tuna steak: hot pan, short cook, rest. Stronger flavour than albacore, less fat than bigeye. Excellent with citrus, chilli, and herb marinades. Local day-boat fish can be outstanding; warm-chain retail fish disappoints.
