Rainbow trout is the common market name for farmed and wild Oncorhynchus mykiss sold whole or as fillets. Expect a mild sweet flavour, soft flakes, and easy pin-boning compared with larger salmon. Pink colour is normal in farmed fish fed pigment; white-fleshed rainbows also exist. Grill whole, pan-fry skin-on fillets, or smoke. Pairs with almonds, brown butter, lemon, and herbs. Avoid fish with soft flesh or pondy aroma. Smaller portion sizes make rainbow ideal for individual servings.
