Oncorhynchus mykiss is the rainbow trout—the world’s most widely farmed trout and the source of both freshwater table fish and anadromous steelhead. Farmed rainbow flesh is mild, fine-flaked, and often pink from carotenoid feed; wild fish vary more in colour and intensity. Pan-sear whole butterflied fish or fillets, bake, or hot-smoke. Skin crisps beautifully. Pull when just opaque; farmed fish are forgiving but still dry if held too long. A weeknight classic when fresh and not muddy-tasting.
