Brown trout (Salmo trutta) is a Eurasian trout with buttery, fine flesh and a flavour often deeper than farmed rainbow when wild or carefully raised. Colour ranges cream to pink; river fish can taste of their insect diet, while lake fish run different. Sea trout is the anadromous form of the same species. Pan-fry, bake, or smoke. Wild brown trout is a sport-and-table luxury in many regions—handle gently and do not overcook. Farmed brown trout is less common than rainbow but prized where available for more character.
