White Teff
A tier
White teff overlaps ivory in trade language—very light seeds for mild flavour and pale injera. Some regions reserve “white” for the lightest commercial class. Taste is clean cereal with gentle sweetness when well stored. Interchangeable with ivory for most kitchen purposes. Excellent entry teff for Western bakers wary of darker grain bitterness. Combine with a portion of brown teff if you want deeper colour and maltier notes.
