S tier
Ivory teff is the pale cream grain preferred for lighter injera colour and a milder, slightly sweeter flour profile than brown types. In Ethiopian grading, lighter grains often fetch premiums for restaurant injera aesthetics. Choose ivory when you want blonde flatbreads and subtle cereal flavour in pancakes or porridge. Still fully teff nutritionally; not a different species. Mill fresh if possible—tiny seeds go rancid once cracked.
