Brown teff is the darker everyday grain—nutty, slightly more robust flavour, and cocoa-tan flour that browns injera and porridges. Often more affordable than ivory in origin markets while still excellent for fermentation and baking. Default whole-grain teff for porridge and hearty injera. Darker colour reads as artisanal in Western gluten-free breads. Toast grains gently before simmering to amplify nuttiness.
