Tieguanyin (Iron Goddess of Mercy) is a premier Chinese oolong from Anxi County in Fujian, made from the Tieguanyin cultivar of Camellia sinensis sinensis. Leaves are withered, bruised (tossed), partially oxidised, then rolled into tight pellets and fired; traditional heavier roast styles contrast with modern lightly oxidised, high-floral “jade” styles. Hand-craft and multi-stage shaping produce the characteristic dense green-to-brown granules that unfurl over many infusions. The cup offers orchid, lilac, and buttery floral aromatics with creamy texture, lingering sweetness, and controllable astringency depending on roast and oxidation. Tieguanyin is a gongfu-cha centrepiece, also used for fragrant iced oolongs and dessert pairings where floral perfume is the goal.
