Eddoe is a smaller, often hairier taro corm type popular in Caribbean and West African markets—side tubers or compact main corms with dense flesh. Flavour is earthy-nutty when boiled; texture less sticky than some dasheen. Excellent in soups and side boils. Peel after boiling if skins cling; cook thoroughly. A market class within C. esculenta. Choose firm small corms without soft spots.
