Iranian Sumac

Iranian sumac is widely used on Persian kebabs and rice sides—often darker and assertively sour, sometimes moistened with oil at the table. A shaker of sumac is as common as salt in many Iranian grill settings. Dust on joojeh and koobideh just before serving. Iranian market sumac quality is high when fresh; colour should not be brick-brown faded. Pairs with raw onion famously.
