Osetra (ossetra) refers primarily to Russian sturgeon Acipenser gueldenstaedtii and the medium-to-large amber-to-brown caviar associated with it—nutty, clean, and long the connoisseur middle path between sevruga intensity and beluga size. Farmed osetra now dominates legal markets. The flesh is firm and fine, excellent hot-smoked or grilled in modest steaks when the farm sells meat as well as roe. For caviar, serve chilled on non-reactive spoons with blini or alone; for meat, brine and smoke or sear gently. Colour and bead size vary with diet and age—farm labels matter more than folklore colour charts. Avoid bargain “osetra” without species and origin paperwork. The word is a grade-and-species tradition, not a free-for-all flavour name.
