European squid is the market name for Loligo vulgaris and closely related Atlantic-Mediterranean squid sold whole, as tubes, or as cleaned rings. Expect a clean flavour, fine texture, and suitability for both quick Spanish plancha work and Italian fritto misto. Size grades matter: small squid grill whole; larger tubes are better sliced or stuffed. Marinate briefly in oil, garlic, and lemon before a ferocious grill, or dust with seasoned flour for a short fry. Pair with aioli or simply salt. Thaw frozen tubes slowly and dry well before cooking. The best European squid needs almost no masking sauce—just heat control.
