Arrow Squid

Arrow squid usually refers to Nototodarus species of New Zealand and Australian waters (and related arrow-shaped ommastrephids), important southern-hemisphere squid with triangular fins and firm, clean white meat. The tubes hold up well to grilling and stuffing; flavour is sweet and less “inky” than some larger oceanic squid when cleaned well. Cut into scored steaks for the barbecue, fry lightly as rings, or use in seafood stews where pieces must keep shape. New Zealand arrow squid is a significant export; quality tracks careful onboard handling. As always with squid, either flash heat or slow braise—skip the middle path. Fresh or well-frozen lots should smell of ocean, not fish-shop fatigue.
