Common springbok are the typical cinnamon-and-white plains antelope of South Africa, Namibia, and Botswana—abundant on game ranches and the source of most springbok biltong and fresh venison. Small carcasses yield neat loins and legs. Flavour is clean, slightly sweet, and very approachable; ideal for introducing diners to African game. Cook loins rare to medium-rare. Springbok remains a volume leader in southern African game meat because of ranch productivity and mild eating quality.
