Antidorcas marsupialis

Antidorcas marsupialis is the scientific name for springbok, the emblematic southern African gazelle-antelope. As a variety label it denotes true springbok venison in formal trade and scientific documentation. Meat is fine, dark pink to red, and delicately gamey—among the mildest commercial African antelope meats. Loins are restaurant favourites; the species underpins much South African game-meat volume.
