Flavour is mild-green and sweet when young; mature flat leaves still cook well but are less “steakhouse crinkle.” Texture is tender without savoy grit traps. Ideal raw in salads, smoothies, and quick wilts. Machine harvest friendly. Bolts in heat like all true spinach—season and climate still rule.
