Morello is the dark-fleshed, dark-juiced sour cherry group of Europe—deep red to almost black fruit, richly flavoured, and essential for Black Forest cake, griottes, and many Central European preserves. Juice stains everything; flavour is winey-tart rather than the brighter acid of Montmorency. Several regional clones share the Morello name. Use for chocolate pairings, liqueurs, compotes, and dark cherry sauces for game. Fresh Morellos are intense; sugar and spice balance them. Often sold jarred in syrup when fresh season is short.
