Balaton is a Hungarian dark sour cherry introduced to the US as a richer-flavoured alternative to Montmorency—firmer flesh, darker juice, and complex tart-sweet character. Fruit holds shape better in some baked applications. It expanded American tart cherry options beyond the single Montmorency standard. Excellent for premium pies, dried cherries, and chocolate desserts. Fresh eating with sugar is more rewarding than Montmorency for some palates. Michigan and other tart-cherry states trialled Balaton widely.
