White sorghum is the pale food-grade grain preferred for gluten-free flour, light porridges, and popped sorghum snacks—low in bitter tannins so flavour stays clean and slightly sweet. Kernels cook to opaque ivory; flour is cream-coloured and relatively neutral in baking blends. It is the supermarket “sorghum grain” default in many Western health aisles. Simmer whole like rice or mill into flour for pancakes and bread blends. Rinse before cooking. White food sorghum is why the cereal can substitute without painting batters purple-brown.
