Light Sorghum Syrup

Light sorghum is a shorter boil or a carefully skimmed kettle: gold, more grassy-fresh, less bitter. It shows the plant more than the caramel. Some makers prize it; others think it tastes unfinished. Use it where you want sorghum without a dark cookie colour. It can crystallise a little more than a long dark boil.
