Popping Sorghum

Popping sorghum is selected small-seeded food sorghum that explodes into tiny white-beige puffs—mini popcorn with a toasty, faintly sweet flavour and crunchy-tender texture. Hulls are thin enough to pop cleanly in a hot dry pan or air popper. It is a snack and garnish grain, not a porridge type first. Pop in a covered pot with a little oil or dry; unpopped kernels are harder than popcorn spurs—sieve them out. Excellent on bowls, chocolate bark, and trail mixes. Choose true popping varieties for yield; ordinary grain sorghum pops poorly.
