Rainbow smelt (Osmerus mordax) is the North American smelt of Great Lakes and Atlantic drainages—small, oily, cucumber-scented, and central to ice-fishing fry culture in the Midwest and Northeast. Flesh is sweet; bones soften in a hot fryer. Dip in batter or cornmeal and fry whole. Smelt fries define late-winter community feedings. Introduced populations in some lakes are managed as both forage and food. Clean promptly—the aroma turns off if fish sit warm.
