European smelt is the market name for Osmerus eperlanus sold whole for pan-frying and as a smoked snack fish. Expect soft edible bones when crisped, mild-sweet oil, and that trademark fresh cucumber perfume on good fish. Serve stacked on brown bread or with tartar and lemon. Do not overcrowd the pan—crisp skin is the goal. Freshness fades fast; frozen smelt can still fry well if glazed properly at sea.
