Unhulled Sesame

Unhulled sesame retains the seed coat—more fibre, minerals, and a slightly more bitter-bran edge that many consider more flavourful for toasting and oil. Colour may be cream, brown, or black depending on variety. Excellent for gomasio and rustic tahini. Crunch is more pronounced. Rinse dusty lots before toasting. Whole-food cooking often specifies unhulled deliberately.
