Hulled Sesame
A tier
Hulled sesame has the outer bran removed—uniform pale seeds that grind into silky tahini and pale bakery toppings with milder flavour. Processing is mechanical; species remains indicum. Preferred for smooth hummus and light-coloured sweets. Slightly more prone to rancidity cues once bran protection is gone—buy fresh. Not ideal when you want black sesame drama.

History
Industrial hulling scaled pale sesame for food manufacturers.
Hulled sesame dominated canned tahini inputs.
Home bakers bought hulled sesame for clean white looks.
Some premium tahini returned to unhulled for flavour, but hulled stayed standard.
