Uni is the Japanese market name for sea urchin gonads sold in wooden or plastic trays as graded lobes. Colour, firmness, sweetness, and melt define grade more than species label alone. Top uni is creamy without mush, oceanic without harsh iodine, and fragrant rather than fishy. Serve ice-cold on rice, or finish pasta off heat. Never leave uni warm on a pass. Once opened, trays oxidise within a day—plan portions tightly.
