Wild sea trout is peak migratory Salmo trutta from free-running coastal rivers—bright silver, deep pink flesh, and a clean marine-river flavour prized above most farmed trout. Season is short; fish are often rod-caught under strict rules. Cook simply: roast, grill, or serve as sashimi-grade only when handled for raw use by professionals. Never buy illegal fish. When you have a legal wild sea trout, restraint in the kitchen is the point—butter, lemon, and respect.
