Pecten maximus is the great Atlantic king scallop of European waters, with a large flat lower shell, a domed upper shell, and a substantial white adductor muscle often sold with the orange-red coral attached. The meat is sweet, nutty, and fine-grained; the coral is creamier and iodine-rich. Hand-dived specimens are prized for minimal grit and perfect shape. Sear hard in a hot pan with foaming butter so a caramel crust forms while the centre stays translucent. Roe-on presentation is classic in Britain and France. Do not crowd the pan or the scallops stew. Dry the muscle thoroughly before searing; wet packs never brown.
