Summer savory is the annual Satureja hortensis—delicate peppery-thyme leaf, classic with beans, eggs, and fresh sausages, milder and more perishable than woody winter savory. Plants are soft-stemmed and frost-tender. The bean herb of French and German kitchens. Add near the end of cooking; dried summer savory is softer than oregano.
