Kala namak (black salt) is South Asian volcanic-style rock salt processed to a pungent, eggy sulphurous aroma from sulphur compounds—pinkish-brown powder when ground, essential to chaats, fruit sprinkles, and vegan “egg” seasoning. A little transforms raita, kala chana, and green mango. Not a neutral table salt; the smell is the point. Store sealed so the volatile notes do not fade into the cupboard.
