Istiophorus platypterus is Indo-Pacific sailfish—the spectacular billed fish with a huge dorsal sail and lean, firm flesh that is more sport trophy than premier table fish. Meat is mild and dry-leaning; smoking and moist cooking help. Some tropical markets use sailfish for dried and grilled products. If cooking legal landings, marinate with oil, grill thin, or smoke for flaking into salads. Sailfish is not a substitute for tuna quality. Prefer release ethics where sport fishing is the main interaction.
