Atlantic sailfish (Istiophorus albicans in some treatments, or Atlantic populations of sailfish) is the western Atlantic and eastern Atlantic sail-billed speedster—lean, firm meat with a mild flavour secondary to its sport reputation. Florida and West African waters are historic centres. Table use is limited compared with tuna or mahi. Smoke, thin-grill, or stew in spicy sauces if using food landings. Atlantic sailfish dries quickly on a hot grill without oil. Many charters practice release; food availability is not a reliable market category.
