Sargol is Iran’s pure-red stigma grade—literally “top of the flower”—with yellow styles fully removed so every milligram is deep crimson thread. Colouring strength and perfume are high; this is the reference Iranian cut for serious cookery and export premiums. Threads are short, brittle, and intensely dye-capable. Bloom in warm liquid for rice, desserts, and sauces. Because sargol commands price, adulteration risk exists in powders and suspiciously cheap threads. Whole sargol should smell honeyed and hay-like, never musty or purely metallic.
