Grades such as sargol and negin describe how much yellow style is trimmed away; top Iranian lots are pure deep red with formidable dyeing strength. Flavour is rich, slightly metallic-floral, and long. Bloom threads in warm water or stock before stirring into tahdig, khoresh, or ice cream. Buy whole threads from trusted importers—powder is the fraud vector. Iran’s volume means both bargain and sublime qualities exist; price and colour intensity are clues.
