Winter rye is sown in autumn, vernalises through cold, and yields the bulk of the world’s bread rye—vigorous cover crop, soil builder, and grain for dense loaves. Berries tend full-flavoured; straw biomass is huge for agriculture beyond the kitchen. Default rye for flour and berries in commerce. Excellent cover-crop grain when food-grade. Flavour is classic rye tang in pumpernickel and Nordic loaves.
