Spring Rye

A tier

Spring rye is sown in spring where winters are too harsh for reliable winter survival or when rotations demand it—generally lower yielding than winter rye but useful for northern margins and salvage plantings. Grain still makes proper rye flour and berries. Use interchangeably with winter rye in the kitchen once milled; agronomy differs more than flavour. Expect slightly different protein and falling numbers by lot.
