Hybrid rye uses modern hybrid breeding for higher yields, better standing power, and uniform crops versus traditional populations—now major in European feed and food rye. Flavour remains rye; processing quality depends on the hybrid and harvest conditions. Millers evaluate falling number and amylase as with any rye. Bakers may not taste “hybrid” directly but benefit from supply stability. Seed must be purchased anew each year—farm-saved seed does not hold hybrid vigour.
