Rosa gallica, the French or apothecary rose, is an old European species with deep pink to crimson fragrant flowers used historically in medicine, potpourri, and kitchen preparations. Petal flavour is true rose with a slightly winey depth; food-grade only when grown without systemic pesticides. Dried gallica petals colour and perfume teas, vinegars, and medieval-revival recipes. Less industrial for rose water than damascena but prized by heritage cooks. Flower once in a flush on old wood in many forms—harvest at peak scent.
