Cabbage rose is the common name for centifolia types with globe-shaped, densely petalled flowers and a gentle, powdery-sweet rose aroma. Culinary cooks use the petals for jams and decorations where a softer rose note than sharp damask is wanted. Harvest in the cool morning; discard bitter white petal bases if they taste green. Dry quickly to avoid browning. Cabbage rose works in European-style baking and pastel icings more than in strongly spiced Middle Eastern syrups, though both traditions can use it thoughtfully.
