Vialone Nano is a semi-fino Verona rice with a knack for absorbing broth while staying tender—beloved for all'onda Venetian-style risottos and thick rice soups. Grains are smaller than Carnaroli yet highly absorbent, so liquid ratios run higher than many cooks first expect. The IGP Vialone Nano Veronese name protects regional production and reputation. Ideal for risotto with lagoon seafood, pumpkin, or radical chicory. Stir gently; it softens faster than Carnaroli if neglected. Also excellent in minestre where rice should swell into the broth rather than stay fiercely separate.
