Meat
Siberian Reindeer
A tier
Siberian reindeer are herded by Nenets, Evenki, Chukchi, and other peoples across Russia’s vast north—among the world’s largest reindeer economies. Meat, fat, and blood products feature in Arctic Russian and Indigenous cuisines. Flavour is robust lean game; frozen winter meat is traditional. Supply reaches Russian cities more than Western export. Young autumn animals give the best steaks; mature animals suit stews and dumplings.
