Domestic reindeer are herded Rangifer of Sámi, Nenets, and other Arctic pastoralists—semi-domestic animals following migration routes under human management. They supply the bulk of commercial reindeer meat in Scandinavia and Russia. Flavour is refined game: dark, lean, slightly sweet. Finnish and Swedish processed products (smoked, cured) are famous; fresh steaks need rare centres. Autumn slaughter after summer fattening yields the best fat cover still modest by beef standards.
