White Pearl is a white currant cultivar—translucent cream-yellow berries of the red currant complex, milder looking, delicately sweet-tart, and beautiful in mixed punnets. Flavour is less “red” visually dramatic but excellent for pale jellies and fresh eating for acid-tolerant fans. Jelly runs champagne-coloured; garnish looks elegant on dark chocolate desserts. Same bush culture as reds. Net birds. Do not wait for red colour that never comes—translucent gold is ripe.
