Ribes rubrum is red currant—translucent scarlet berries on strigs, brightly acidic, pectin-rich, and jewel-like for jelly, sauces, and garnish. Flavour is cleaner and less musky than black currant; sweetness rises when fully ripe but acid always sings. Northern European gardens and pâtisserie culture adore them. Strip with a fork; jelly is the classic high-pectin showcase. Freeze on trays. Fresh pastry garnish needs firm ripe fruit. White currants are colour forms of the same complex. Birds will strip bushes—net early.
