Method
Prepare trays
- Heat the oven to 180°C (160°C fan).
- Line two trays.
Cream and mix
- Soften the butter; cream with the sugar until pale and fluffy (2–3 minutes).
- Beat in the egg and vanilla.
- Mix in the flour and salt to a soft dough.
Shape
- Scoop tablespoon portions onto the trays, spacing well.
- Flatten slightly if you like thinner cookies.
Bake and cool
- Bake 10–12 minutes until the edges are golden and the centres still soft.
- Cool on the tray 5 minutes, then on a rack.
Serving
Cool on a rack; serve with milk or coffee.
Storage
Airtight tin up to 5 days. Dough balls freeze well; bake from frozen adding 1–2 minutes.
