Method
Prepare pastry and filling
- Heat the oven to 200°C (180°C fan). Place a baking tray on the middle shelf to preheat — this helps set the base.
- Prepare the shortcrust pastry if not already made (see the Shortcrust Pastry recipe). Keep chilled until ready to roll.
- Peel, core and slice the apples about 5 mm thick. Toss with the sugar and cinnamon; leave 10 minutes, then drain any excess liquid.
Assemble the pie
- Divide the shortcrust into two pieces (about two-thirds for the base, one-third for the lid). On a lightly floured surface, roll the larger piece to a circle about 3 mm thick and line a 23 cm pie dish, leaving a small overhang.
- Pile in the apples, mounding slightly in the centre. Dot with small pieces of the butter.
- Roll the remaining pastry for the lid. Brush the rim of the base with a little water, lay the lid on top, trim and crimp the edges to seal. Cut 3–4 steam vents in the centre.
- Beat the egg with the water and brush the top lightly (egg wash). Optional: sprinkle a pinch of sugar on top.
Bake
- Bake on the hot tray for 20 minutes at 200°C (180°C fan), then reduce to 180°C (160°C fan) and bake 25–30 minutes more until the crust is deep golden and filling bubbles at the vents. If the edges brown too fast, cover them loosely with foil.
- Cool on a rack for at least 15 minutes before slicing.
Serving
Rest 15–20 minutes after baking so the juices settle. Serve warm or at room temperature with cream, custard, or ice cream.
Storage
Cool completely, then keep loosely covered at room temperature for 1 day or refrigerate up to 3 days. Reheat slices in a 160°C oven for 10–12 minutes if desired.
