Blonde ray under the Ray parent is the same Raja brachyura sold as pale, broad wings with excellent sweet flavour—slightly larger and meatier than many thornbacks. Ideal for restaurant portions of poached or roasted wing. Cook until just opaque; finish with brown butter or a sharp vinaigrette. Blonde ray is a workhorse species for responsible skate-style dishes in the Northeast Atlantic when fishery data support harvest.
